Steam heating cooking vat is the most common equipment in ham processing. It is water cooking usually. Putting the sealed ham moulds into the cooking vat, cooking them in desired temperature or time.
It comprises magnetic valve, outfall, steam tube, temperature control system, over flow pipe, vat and vat cover etc. It is completely made of stainless steel. For saving energy and safe operating, most of them have warm keeping layers and lids. Cooking control including water temperature control, time control and meat temperature control etc. But meat temperature control is the most common way.
Setting the temperature and time, heating the water up to 50°c, then puting the ham moulds. The surface of low temperature hams can be frozen quickly under this temperature, so that the water in raw materials will not exosmic because of heat shrinkage. Then keeping heating till up to the setted value.
